Julie Child would never say it, nor allow those around her to say it. I’ve read many books about Julia; she was known for cooking tirelessly (almost said it!) then exuberantly heading out for a late night on the town. But if you want to say you’re tired of planning meals (come on, even if you like to cook that can happen, yes?) I’ll understand! That’s why I’ve decided it’s time to cook from the plethora of food websites, clippings, magazines and cookbooks I collect. Besides, as my friend Dianne Jacob wrote about food blogging, it takes at least 6 hours (often more – I know) to create, and write, and photograph, those recipes. So I’d like to give credit for that work!

Or I’ve been developing recipes all day and don’t want to cook any more. As dinner time nears, I scratch my head thinking: What’s going to fill that spot on our plates next to the chicken or chop or fish filet? Yes, simple veggies are a must, but how about something starchy? My answer is usually a quick one: Couscous! It’s versatile and so fast to make.

Ummm! Chili ranks right up there with other winter-warming foods. It’s a satisfying dish and easy to make. It also freezes and reheats well, so making a double batch is a good idea. And it’s not just for supper. Big game day, here we come!

And with the autumn equinox—September 22—just a few days away, now is the time to make this sauce! It’s delicious and super easy. Forget about peeling and seeding tomatoes; it is just not necessary. But do be mindful: The more flavorful the tomatoes, the better the sauce. Use 2 pounds very ripe tomatoes to make 2 cups delicious sauce. See my kitchen notes for making bigger batches.

Similar to coleslaw, macaroni salad can get really ho hum. But not if you spice it up with an infusion of totally different flavors. This zesty macaroni salad is now my stand-by recipe. It’s terrific with burgers, or with grilled steak, chicken kabobs or grilled fish.

It is traditional, yet positively delicious and easy. Why easy? Because I chose not to make my own cheese sauce, and instead used canned cheese soup, off-the-shelf breadcrumbs, and a lovely dried herb combo. Don’t faint! If you’ve read About Us, then you know my kitchen philosophy – good food, simple cooking. However, if you do want to go a bit upscale, use Gruyere cheese instead of the Monterey jack. And, if you would like to know how to make homemade breadcrumbs for the topping, please comment at the end of this recipe. (But this mac & cheese is perfect the way it is!)
